Ingredients

2 lbs. zucchini, unpeeled, washed, and sliced thin
1 large onion, chopped
4 garlic cloves, finely chopped
2 tsp. sweet basil
1 tbsp. olive or vegetable oil
½ tsp. salt or to taste
½ tsp. of ground black pepper or to taste
1 [28 oz.] cans of stewed tomatoes
1 [8 oz.] can of tomato sauce, prepared marinara, or pasta sauce

Directions

Add oil to large sauce pan and heat on medium-high.

Stir in chopped garlic, onions, and zucchini, stirring occasionally until the onions are translucent and the zucchini sweats, about 20 minutes.

Season to taste with salt and pepper.

Add in the sweet basil, then the stewed tomatoes and tomato sauce.

Reduce heat. Cover and simmer for half an hour, stirring occasionally.

Serve hot or cold.

Optional: Dress it up with cheese or serve with some crusty bread.

This is a family recipe started by my grandmother and mother. They were both fantastic cooks and would experiment with using whatever was left in the pantry or fridge, and could stretch a food budget like nobody’s business!
