1 pkg. white chicken chili seasoning mix
1 tbsp. canola oil
1 lb. ground chicken
1 cup water
1 [16 oz.] can white chili beans
1 [16 oz.] can chicken broth
1 [16 oz.] can white kidney beans
1 [16 oz.] can diced tomatoes
1 tbsp. crushed garlic

Heat the oil in a medium pot, then add the ground chicken. Stir and cook for 3 to 5 minutes until no longer pink.
Add in the water, broth, seasoning mix, garlic, beans, and tomatoes. Bring to a boil, then reduce heat and cover. Simmer for 10 minutes until ready to serve.
Optional: Top with cheese, green onions, sour cream, or chopped cilantro.
This recipe came to me in my former career, when some of my co-workers decided to have a chili cook-off. I wanted something a little different than the usual red chili. And here we are after a few tries. Now it's a popular dish with family and customers alike!
