Yevette’s Gourmet Tacos

Ingredients

1 lb. chopped collard greens
1 lb. chopped mustard greens
1 lb. shredded cabbage
1 lb. spinach
½ lb. chopped kale
½ lb. chopped red peppers
½ lb. chopped red onions
½ lb. sliced yellow zucchinis
1 tbsp. olive oil (Tip: Substitute with vegetable oil)
½-1 tsp. salt
1 tsp. black pepper
6 oz. low-fat shredded cheese
6 oz. of tortilla chips, or 10-15 chips per serving

Directions

Stir fry all greens in oil and then combine all other ingredients until well done; add salt and pepper.

Top with shredded cheese and serve with tortilla chips on the side.

Optional: Garnish with chopped tomatoes and green onions.
