Ingredients

2 cups Shiitake mushrooms
2 large carrots, washed, peeled and chopped
½ medium yellow onion, chopped
3-5 kale leaves, washed, stem removed, and chopped
3 tbsp. safflower (Tip: Substitute with olive or vegetable oil)
1 tbsp. kudzu, dissolved in one cup of cold water (Tip: Substitute with cornstarch)
1 tbsp. dried parsley
1 tsp. basil
2 garlic cloves, smashed
Salt to taste
1 pkg. brown rice, prepared according to package directions

Directions

In a large pan, add oil over medium heat.

Add chopped onions and smashed garlic. Sauté until the onions are almost translucent.

Add the mushrooms, and sauté until almost thoroughly cooked.

Add the remaining ingredients and seasonings, cover for about 5 minutes.

Pour stir-fry over prepared rice and serve.
