Ingredients

3 mini cucumbers or 1 English cucumber, thinly sliced
1-pint cherry tomatoes, halved
½ white onion, thinly sliced
1-2 tbsp. lemon juice
2-4 tbsp. olive oil (Tip: Substitute with vegetable oil)
Salt and pepper to taste

Directions

In a large bowl, combine cucumbers, tomatoes, and onion.

In a separate bowl, whisk together the lemon juice, oil, and salt and pepper to taste.

Drizzle dressing over vegetables and toss to coat.
