Ingredients

1 lb. fresh or frozen shrimp, peeled and deveined
1 cup broccoli, cut into bite-size florets
1 cup zucchini, chopped
1 cup cauliflower, cut into bite-size florets
4 cups steamed brown rice, prepared according to package instructions
3 cloves garlic, minced
½ tsp. salt
½ tsp. pepper
1 tbsp. coconut oil (Tip: Substitute with canola oil)

Directions

In a skillet, heat oil over medium-high heat. Add shrimp and stir-fry for 2 minutes. Add half the garlic and stir-fry for 2 minutes more. Transfer shrimp to a plate.

Add rest of garlic to the pan, then add vegetables and season with salt and pepper. Cook until heated through, about 3 minutes.

Return shrimp to pan and stir. Serve with rice.
