Ingredients

1 lb. ground turkey
2 tbsp. olive oil (Tip: Substitute with vegetable oil)
1 medium onion, chopped
1 green pepper, chopped
1 ½ teaspoon cumin
1 [14.5 oz.] can tomato sauce
½ cup cilantro, chopped
½ cup yellow squash, chopped
1 cup cut zucchini, chopped
1 [15 oz.] can yellow corn, optional
1 cup water
2 tablespoons tomato chicken bouillon (Tip: To lower the sodium, use a tablespoon of low-sodium chicken bouillon and a tablespoon of tomato paste)

Directions

Heat the oil in a skillet over medium-high heat. Add the onion and green pepper and cook, stirring occasionally, until they begin to soften.

Stir in the cumin and cook for an additional 2 minutes.

Add the ground turkey and cook until no longer pink, 5-7 minutes.

Stir in the tomato sauce, yellow squash, zucchini, corn (optional), bouillon, and water. Reduce heat to medium-low and simmer for 10-15 minutes.

Remove the skillet from the heat. Add cilantro, stir, and serve over rice.
