Ingredients

2-3 lemons
2 tbsp. olive oil (Tip: Substitute with vegetable oil)
1 tbsp. minced garlic
1 cucumber, diced
½ red onion, diced
1 cup diced tomatoes or halved cherry tomatoes
1 [16 oz.] can garbanzo beans
Chopped parsley to taste
Salt and pepper to taste

Directions

Squeeze the lemon juice into a bowl, then whisk in the oil and garlic.

Add the cucumber, onion, tomatoes, and garbanzo beans. Toss to combine.

Season with salt and pepper to taste, and garnish with parsley. Refrigerate for about 1 hour and serve cold.
